Vignoble De Pauline, Auxey-Duresses Rouge 'Le Plain de Lugny' '22

This 100% Pinot Noir is from organic vines planted in 1972 in Le Plain de Lugny lieu-dit, covering 33 acres of marl and limestone soils. It has a deep nose with aromas of ripe black fruits. The palate is fruity, juicy, and textured, with a complex, elegant structure. "It is a beautiful pairing with boeuf bourguignon or duck. It will definitely age well! Harvested by hand, sorting in the vineyard and on a vibrating table in the cellar. Vinification: total destemming, a few days of cold maceration, pumping over but very little punching down and pressing, All work is done by gravity. 12 months of barrel aging with 20% new oak. After a year, the barrels are racked for blending in vats before bottling.
